In the Kitchen ~ Pumpkin Butter


Although it is not quite "fall" here by the calendar, the weather sure is cooperating and fall temperatures have found their way into our area.  Crisp cool days, chilly nights...this is my favorite weather! 


It's this time of year that I love anything to do with pumpkins!  I love the bright orange color, the thought of spending an afternoon with my babies ~ carving faces in their pumpkins, the smell of Autumn, baking pumpkin pies, pumpkin rolls, pumpkin ice cream....and finally pumpkin butter! 


Since I've been on this pumpkin kick, I have left little comments on my facebook page about pumpkin this & that.  A friend of mine called & said I needed their pumpkin butter recipe to try out.  I wouldn't be disappointed and even I could make it! ;)



I got the recipe, grabbed the ingredients at the store, then got to work.

PUMPKIN BUTTER

1 large can of pumpkin
4 1/2 c. sugar
1 TBS. pumpkin pie spice
1 box Sure Jell


Mix ingredients in large pot on high heat.  Stir until boiling.  Boil additional minute, stirring constantly.  Remove from heat.  Spoon into jelly jars.  (You can then seal them in a water bath, which is the method I used.) Share & enjoy!! :)
